As the seasons change it’s nice to remind ourselves that New York City is always ripe with top-notch, true farm-to-table restaurants that turnover their menu in correlation. Here are some of the best, sure to warm your spirits, even as the colder winds blow in this Fall.

This restaurant frequently tops online best-of lists and features seasonal Provençal cuisine, augmented with contemporary American fare. The French ex-pat chef changes the menu daily, and assures restaurant goers this is only reflective of his efforts to be certain the best, freshest ingredients from local farms are utilized. One recent menu included wild king salmon gravlax with hackleback caviar along with baby red beets, spring onions, horseradish crème fraîche and an “everything” tuile. Hidden three steps below street level, Blue Hill is located on the site of a former speakeasy, and showcases local food and wine lists strictly from artisanal providers. Guests can choose from the four-course “Tasting Menu” or opt for the “Farmer’s Feast,” a dynamic, six-course meal inspired by the current week’s harvest. Diners can expect creative presentations of American cuisine in a formal setting. A recent Farmer’s Feast featured tomatoes with cucumber and horseradish; a crabmeat burrito; red pepper eggs with chanterelle mushrooms, summer beans and pistachios; and, eventually, peaches with blueberries and grilled corn ice cream.

From restaurant magnate and Michelin chef Jean-Georges Vongerichten and Dan Kluger of Tabla Restaurant fame comes this wide-open space with a menu featuring all-natural ingredients culled from their own rooftop garden and other local boutique producers focused on holistic development and environmental consciousness. Open for brunch, lunch and dinner with a cocktail menu as well as a lengthy wine list, a recent menu revealed sautéed chipotle chicken tacos, grilled Maine lobster, spicy glazed baby back ribs, and charred octopus with smoked paprika, crème faîche and a guajillo vinaigrette.

A modern American restaurant and cocktail bar, Prospect draws inspiration from cuisines that originate all around the world, offering fresh takes on classic dishes. There are several dining options, each providing a unique experience, but try and procure a seat at the marble “Chef’s Table” where you can watch your dinner get prepared while you sip on a craft cocktail. Of course, the menu changes frequently, and like the other establishments on this list, all of the ingredients are locally sourced. Diners recently began their night with black bean hummus and house tortilla chips, followed by Brooklyn grange baby greens that included shaved vegetables and pumpkin seeds in a mint vinaigrette. They wrapped things up with Peruvian pork spare ribs with a side of crispy yucca, sweet corn salad and jalapeño crema.
